Sunny So-Cal!

This past weekend Chris and I got to enjoy a mini-spring break!
We went to a meet at UC Irvine and really enjoyed the sunshine and high 70's!


We went to the Newport Beach Temple and did a session on Friday afternoon after the men's team flew in. It was also our 3 month anniversary, so we went to dinner that night to celebrate (with TJ and Tyler also)

For dinner we went to Lucille's BBQ which was incredibly good! We split the Feast for 2 which included:
-homemade biscuit w/ apple honeybutter
-caesar salad
-macaroni and cheese
-mashed sweet potatoes
-2 kinds of ribs
-half a chicken
-brisket
-tri tip
-and for dessert Apple and Peach cobbler
We were so stuffed at the end, but it was so good we couldn't stop eating!
Happy 3 months! Oh how I love this boy!


Saturday was the track meet at UC Irvine. It was a very warm day which we enjoyed, but aren't used to competing in yet.

A Weekend without a Meet!!!

This weekend we got to stay home and enjoy being together and not worrying about a track meet!
We went to the Dollar Theater and saw Extraordinary Measures which was a great movie!

Then we splurged on Saturday!!
We played paintball with our pole-vault friends TJ and Krista and Kenny and Kari. It was really cold, but fun. We played up at Squaw Peak. It lightly rained when we first got there, but by the end it turned into snow. It was a lot of fun being outside!

Unfortunately we didn't take any group shots, and even more sad is, we don't have any after pictures. We were so cold and miserable at the end that we just jumped in the cars and hurried home to warm up.


Then we came home and made homemade pizza. I tried out a new dough recipe I'd been wanting to test. We also used our new pizza stone.
And the results= delicious!!
We made pepperoni with red onion, and an awesome BBQ chicken with pineapple.

Here is the fast and easy recipe I used for the dough. I doubled the recipe and had enough to make 3 pizzas. I also used whole wheat flour which gave the dough a nice texture.

3 cups flour, more or less
1 tablespoon honey, heaping
1 tablespoon oil, heaping
1 cup warm water
1 tablespoon yeast
1/2 teaspoon garlic salt

Preheat oven to 475 degrees. (If using a pizza stone, let stone heat for at least 30 minutes in the oven before baking pizza.) Mix all pizza dough ingredients together, except the flour. Add flour and knead for a bit then put into pan (or use a pizza peel and pizza stone). If baking in a sheet pan, bake for about 12 minutes (checking often) until crust is browned and cheese is golden and bubbly. If baking on the preheated pizza stone, slide pizza onto stone and bake for about 8 minutes. Makes 1 large pizza.
